Beets are also regarded as an excellent liver cleansing, detoxifying, anti-cancer, and anti-inflammatory food. Raw beet roots have a crunchy texture that turns soft and buttery when they are cooked. They are incredibly rich in nutrients, concentrated in vitamins and minerals as well as carotenoids such as beta-carotene and lutein/zeaxanthin. Avoid beets that have spots, bruises or soft, wet areas, all of which indicate spoilage. Cut the majority of the greens and their stems from the roots, so they do not pull away moisture away from the root.Wash, drain and then cut your beets into disks, halves or quarters.
With a wooden spoon, mix the grated beets with sea salt, to taste. Leave 2 inches of room at the top of a jar or 4-5 inches of room at the top of a crock. Once beets are immersed, place fermentation weights into the jar or crock. Put jar or crock in a cool area where the temperature will be around 75 degrees. If temperature too high or too low, the beets may not ferment and could spoil!
After 2 weeks, sample the beets to see if they taste ready to eat. I will return here and tell you my results with this recipe. These pickled beets are not sweet with sugar, though they are sour and fresh tasting. If your beets are not very juicy, either shred them, or add some salted water to the jar. Pickled beets are one of my favorites, and your recipe looks great. I pickled some about 2 months ago and over time, they’ve gotten to be delicious. These colorful root vegetables contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers, especially colon cancer. And when beets are fermented (see recipe below), they become little powerhouses of nutrition!
Smaller, younger beets may be so tender that peeling won’t be needed after they are cooked. Store beets unwashed in the refrigerator crisper where they will keep for two to four weeks.
Optionally, you can grate, slice, shred or chop the beets into a non-metal bowl. Pack the beets firmly and evenly into a clean crock, glass jar or enamel container until liquid comes out of the beets freely. If you don’t have weights, put a plate on top of the beets (if using a crock) and a large freezer bag filled with water on top of the plate. Fermentation will begin within a day, depending upon the room temperature. Cover the container with a clean towel and check after 2 days, releasing some of the carbon dioxide that has built up inside. The flavor will continue to mature for the next several weeks. I had hoped to find more 1st hand experience with this specific method.
Our weather has been horrible and the farmers have had to replant the beets twice. I try and eat fermented beets at least once a week, but one of my favorite ways to eat beets is borscht.

When the temperature of the candy begins to drop, add the remaining 1/2 cup of powdered sugar to the pan, then use a hand mixer on high speed to combine. Repeat with the remaining ingredients, and then chill the candy bars until firm. When the mixture is smooth, add 3/4 cup of powdered sugar and stir. Use a candy thermometer to bring the mixture to exactly 230 degrees, stirring often, then turn off the heat. Keep mixing until the candy cools and thickens and can no longer be mixed. Let the candy cool in the pan for 10 to 15 minutes, or until it can be touched.

Your recipe also sounds good for larger peppers to eat, like jalapeno. I have had pepper sauces before and at relatives and have made it with cold vinegar, but none of those compared to this. Oh so good over freshly cooked peas and so much more!
The only thing olive oil does is keep the vinegar from rusting your lid. I use to make pepper sauce in ornamental jars that don’t need to seal and we would add vinegar to it when it would run low.Does it act as a preservative, or is it there for flavor or some other reason?

You can’t properly enjoy turnip greens without some pepper sauce. I find some varieties too hot to eat painlessly, but they do make a good pepper sause for seasoning or they can be used in small quanity to spice up a meal. I made the mistake and put a tablespoon in some the first time and was unbearable. Try it with different kinds of hot peppers – that’s what we like to do each year with our peppers from our garden. Since this is sealed does it have to be refrigerated after it is opened?
